If you want a quick go-to breakfast packed with healthy ingredients, you can’t go wrong with this pancake recipe. These sweet blueberry pancakes contain zero flour, but you’d never notice. They’re as thick and fluffy as the traditional kind.

If you want a sweeter option for these pancakes, you can drizzle over a teaspoon of honey or maple syrup. But with the fruit in this recipe, you really shouldn’t need it – especially if you’re trying to keep your sugar intake low.
Flour-free and fluffy blueberry pancakes
Ingredients
- 2 Large Ripe Bananas
- 100 g Jumbo Porridge Oats
- 2 tsp Baking Powder
- 1 pinch Salt
- 2 handfuls Blueberries
- 2 tbsp Greek Yogurt
- 2 medium Eggs
- 1 tsp butter
Instructions
- To prepare the batter mixture: Add the bananas into a blender. Gently pour in the oats, baking powder and a pinch of salt. Add in the yogurt and the eggs. Blend until smooth.
To make the pancakes: Set aside a small amount of blueberries, and add the rest into the batter mixture. Add a small amount of butter into a frying pan on medium heat. Take a tablespoon amount of the batter and pour into the pan. Heat until it starts turning golden and then flip. Repeat, and then remove from the heat. Continue this until you’ve used up all your batter.Serve with the rest of the fresh blueberries and (optionally) another tablespoon of greek yogurt.
